Peanut Butter Chicken

  • 2 whole chicken cut into 8 pieces
  • 4 tbsp oil
  • 1 tsp garlic
  • 2 tomatoes finely chopped
  • 2 onions finely chopped
  • 1 tsp scotch bonnet pepper paste
  • 4 tbspful smooth peanut butter
  • 1 cup hot water
  • Salt to taste




Heat oil on medium high heat and fry the chicken with garlic - sear on both sides.

Brown onions. Add chilies, salt and tomatoes. Cook until all incorporated.

Mix the peanut butter in the hot water and add to the chicken. Simmer until the chicken is done. Adjust seasoning according to taste.

Serve with hot steamy rice.
